Classic Tomato Sauce

Best in the summer and early fall when you can still get good tomatoes.
  • 500g of plum tomatoes
  • 1 small onion
  • basil leaves
  1. Take 500g of plum tomatoes and cut them finely.
  2. Skin and dice finely a small onion.
  3. In a frying pan, sauté the onion in olive oil for five minutes, then add the diced tomatoes. Cook for a while, stirring frequently.
  4. Add a pinch of salt and some chopped basil leaves when you remove from heat. Add this to some spaghetti (spago means “string,” so spaghetti means “little strings”) cooked al dente, or just a little stiffer than normal
