Panzanella Recipe

This is a way poor people used to use up stale bread. I admit my recipe isn’t the classic one, but it’s still good. The night before you want to make this dish, cut good white bread in cubes and put in a plastic bag (leave the bag open). The next day chop coarsely 6 large, ripe tomatoes and ½ of a small red onion. Add this and ¼ cup of chopped basil leaves to the plastic bag. In a small jar (an old jar cleaned out will do), make a vinaigrette: two parts olive oil to one part vinegar (balsamic is great for this!), plus salt, pepper, and whatever spices you want. Pour the vinaigrette into the plastic bag with the bread mixture, close the bag, and mix.

  • extra virgin olive oil
  • vinegar (balsamic is great for this!)
  • Salt, pepper and spices
